Jerk Salmon

"Jerk" refers both to the method of slow roasting meat over a fire as well as to the sauce/marinade and seasoning rub that is used.  There are a lot of ingredients in jerk marinades or sauces, such as allspice, onions, garlic, Scotch bonnet peppers, soy sauce, brown sugar, ginger, cinnamon, nutmeg, cloves, and thyme, which are used to flavor the meat.   Spice blends such as this are also commonly used in Jamaican jerk seasoning. 

Fried Chicken & Mild Sauce

Mild - The most underrated and delicious condiment in America is mild sauce, and you'll find it on the side of your fried chicken in Chicago's South Side (and you should try it someday). In Chicago, such heavenly elixirs are as common as giardiniera and unbridled optimism about Justin Fields. In a flavor somewhere between ketchup, barbecue sauce, and hot sauce, the condiment is pure comfort. 

Unlike most foods, mild sauce has a complicated origin story. In spite of several claims to the sauce's invention, the culinary muse is certainly a tomato-based Southern barbecue sauce. It was restaurants like Harold's Chicken Shack, Uncle Remus Saucy Fried Chicken, and Lem's Bar-B-Q that perfected and popularized the condiment in the 1950s and 1960s. Furthermore, since the founders of all three restaurants hail from the south, mild sauce is even more closely related to Southern barbecue sauce.

Each location's sauce has its own unique recipe, but it's likely it was created to add some heat to fried chicken, so homemade ketchups and hot sauces were combined. A mild sauce was a culinary change-up to hot sauce and a precursor to Buffalo sauce, which was invented more than a decade later in 1964.

It's not just the flavor of mild sauce that attracts people, it's also its relationship with the community. Lupe Fiasco, who literally penned a tribute to the chicken and condiment in 2018, is one of many Chicago-based artists who use mild sauce and Harold's in their art. Perhaps more impressive than its flavor is its cultural impact. 

Today, an order of SouthSide chicken looks something like this: white bread, well-done fries, and shatteringly crisp fried chicken, all drizzled with mild sauce. Having tested extensively (and deliciously), this recipe is a fair representation of Chicago's mild sauce.

     Blackberry Bar-B-Que

The healthiest berry is the blackberry! Blackberries are one of the tastiest snacks you can pack for the day due to their high fiber content and low calorie value, and now you can enjoy them with a Bar-B-Que Sauce. In terms of taste, blackberry sauce is mild, slightly bitter, peppery, and tart.

          Blackberry Jalapeno

A slow tingle of heat after you taste Blackberry Jalapeno is created from the freshest berries and peppers. A mouthful of flavorful goodness is created with small batches to create a thick texture.

                Honey Garlic

This sauce takes on intensely savory garlic flavors as it ferments with honey, and it becomes super runny and perfect for drizzling over roasted vegetables, cheese boards, and pizza. Making flavorful honey isn't the only purpose of this recipe. Fermented garlic cloves lose their sharp bite and taste mellower and sweeter while losing their harsh bite. Our favorite way to use these cloves is to stud them into focaccia, slice them and add them to pasta sauces and marinades.

                Honey Cajun

Cajun Honey-One of the most well-known bee species is the honey bee, which produces honey that is sweet and viscous.  Honey is produced by bees by gathering and refining sugary secretions from plants (primarily floral nectar) or other insects, like honeydew from aphids. Refinement takes place both inside individual bees through regurgitation and enzyme activity, and during storage in the hive, when water evaporation concentrates the honey's sugars. In this case, it is mixed with the cajun seasonings (such as those sold in stores like Slap Ya Mama and Tony Chachere's) typically containing black pepper, white pepper, cayenne pepper, onion powder, garlic powder, and paprika. Cajun spice mixes can include salt, mustard powder, chile peppers, or cumin for different flavors.

          Sweet-Hot -N-Spicy 

Featuring sweet, hot, and spicy seasonings, fresh milled brown sugar, and smoked and cooked to perfection, this is a sweet, tangy, and smoky favorite. Cayenne pepper and black pepper add spice to the dish.

           Pineapple Habanero

Combining the sweet, tropical notes of pineapple with the fiery heat of habanero peppers results in a flavor profile both bold and balanced. Whether you like spice or fruity flavors, this culinary delight is sure to awaken your taste buds. A nice citrus tartness from the pineapple adds more flavor to the sauce along with the pepper's nice spicy kick.

Great sauces in a great place

Fing-R-Lickin Sauces is co-founded by myself, Miracle Gutter and my mother Aquanetta Gutter. As we prepared different entrees for an event, we decided to add extra flavoring to some and it was a big hit.

There are a number of sauces we've created, including Chicago Style Sweet and Mild Sauce, Cajun Honey Glazed Sauce, Jerk-Hot-N-Spicy, Honey Garlic, Sweet-N-Spicy Mango Habanero, Blackberry Jalapeno, Blackberry Bar-b-Que, Strawberry Habanero, Sweet Inferno, Inferno Caliente, Inferno Extreme, Pineapple Habenero, Vegan Sauces, and Gluten Free, and many more.

 

 

We all enjoyed the Chicago Style Sweet and Mild Sauce on the fried chicken, Cajun Honey Glazed on the shrimp casserole, Jerk-Hot-N-Spicy on the salmon croquettes and cabbage, and Blackberry Bar-B-Que on the ribs and turkey tips.
